2 Gluten Free Rosie & Jim Garlic Chicken Kiev
Potatoes, peeled and chopped in half
1 or 2 sprigs of Spring Onion chopped – the white side only
Splash of Milk
Tablespoon of Butter
10-12 Medium sized Asparagus, chop the ends off
Lemon juice, freshly squeezed
Olive Oil
Salt / Pepper

Heat the oven to 190oC or 170oC for fan assisted ovens.

Place the Rosie & Jim Chicken Kiev’s on a baking tray and bake for 25-30 minutes (35-40 minutes if frozen).  Set a timer, just in case!

While they are cooking, chop the potatoes into chucks so that they will cook in 30 minutes.

Boil or steam the potatoes – whichever you prefer, until cooked.

Top Tip - * If your family love mashed potato and you hate mashing, we highly recommend you invest in a Potato Ricer. Smooth mashed potato in minutes without the hard work - it’s a very handy gadget for the kitchen!*

Chop the Spring Onion thinly – using only the white end of the onion.

Steam the Asparagus for 5-6 minutes. If they are very thick they may need another minute, but you want them al dente and crisp.

When the potato is cooked, mash the potatoes in a pan; add a splash of milk, the butter and season with salt and pepper. When it’s nice and creamy add in most of the Spring Onion, but keep a little for plating up.

When the Asparagus are cooked, but still have a little bite, take them off the heat and add a pinch of salt, pepper and a little drizzle of olive oil.

The Rosie & Jim Garlic Chicken Kiev should be ready now, so take them out of the oven and plate up –
Spoon some of the creamy mashed potato on the plate.
Add the Chicken Kiev on top.
Place the Asparagus on the plate and squeeze a little Lemon Juice over it.
Sprinkle the remaining Spring Onion on top

Serve up to your waiting loved one and wait to hear the Mmmmmmmm...!

We are delighted to announce we are embarking (excuse the pun!) on another exciting partnership with the Irish Guide Dogs for the Blind by sponsoring the training of 3 new pups. The pups, from the A Litter, the first litter of the year, were born on February 5th and are named Aska, April and Andrew.

John Burke, Corporate Partnerships Manager for Irish Guide Dogs for the Blind commented, “Over the last two years the team at Rosie & Jim have supported 3 pups Champ, Izzy and Hank which was a truly wonderful and rewarding partnership: two of the dogs graduated to be Guide Dogs and one to be an Assistance Dog. Rosie & Jim have most definitely helped us to change lives. We are now delighted to have the team form another partnership with Aska, April and Andrew for the next two years and we look forward to tracking their progress through puppy raising, formal training and onwards to graduation. Thank you to everyone at Rosie & Jim.”

The cost of early training of a Guide Dog puppy is €5,000 per puppy for their first year. Rosie & Jim are funding €30,000 to provide vitally important early training for three puppies for their first two years.
With more than 54,810 people in Ireland registered blind or visually impaired and over 1% of the population impacted by autism, the Irish Guide Dogs for the Blind works tirelessly to facilitate those affected by providing them Guide and Assistance Dogs. The average cost of training a dog is in the region of €53,000 and the charity rely on 85% of their funding through sponsorship like this and fundraising to continue to deliver their vital services for free throughout Ireland.

“We are thrilled to again assist with the amazing work carried out by Irish Guide Dogs for the Blind by supporting the training of 3 dogs who will provide a great sense of assurance and independence for families and individuals. "Andrew has progressed well with his training. He has learnt to stop at kerbs, his straight line. He knows his left and right turns and can find doors, stairs, and lifts. He is willing, responsive and clever.. He is enjoying the work and on his time off, he loves going to the woods for a run and swimming."
