Ingredients
Rosie & Jim Chicken Fillets or, if you like it spicier, Rosie & Jim Southern Fried Chicken Breast Fillets
A bag of fresh leaf Spinach, washed
1 Onion, finely chopped
1 clove of Garlic, finely chopped
Nutmeg
Salt & Pepper
White wine
Hollandaise sauce (shop bought or follow our gluten-free homemade recipe below)
Grated Parmesan or White cheddar
For the homemade hollandaise:
200g Butter
3 Egg yolks
3 tbsp Dry white wine
1 tbsp Lemon juice
Salt
White pepper
Method
2 Rosie & Jim chicken breast fillets, cook in the oven according to the packaging instructions.
Heat some oil in a pan and sauté the onion and garlic until soft.
Deglaze with a splash of white wine.
Add the spinach and season to taste with salt, pepper and nutmeg.
Hollandaise Method:
Melt the butter in a saucepan, set aside.
Place a bowl over hot water (water bath).
Add the egg yolks with the wine and lemon juice with a whisk in it until they are creamy.
Season with salt and pepper.
Remove the mixture from the water bath and add the melted butter spoon by spoon and continue stirring.
Serve immediately.
Serve as soon as the chicken breast fillets are cooked.
Add a little hollandaise sauce on top of the chicken fillets, then add some spinach, add another spoonful of hollandaise sauce and add grated choose on top.
Bake for 5 minutes in the oven at 180 °C and then brown under the grill for another 4/5 minutes - depending on how brown you want it.
New potatoes go particularly well with this! Enjoy!
