Ingredients
- 2 Rosie & Jim Sweet Chilli Chicken Kiev
- 4 large potatoes, peeled, washed and cut into chips
- 3 carrots, peeled and grated
- 1cm of ginger, skin removed, finely chopped
- 1 teaspoon Mirin (optional)
- 1 teaspoon toasted Sesame oil
- Sesame seeds, toasted until brown (careful – they’re very easy to burn!)
- Olive Oil
- Salt & Pepper
- Mayonaisse
- Sriracha chilli sauce
Method
Heat the oven to 190oC or 170oC for fan assisted ovens.
Peel potatoes and chop into your favourite chip size. We like medium chunky!
Put into a bowl and add a splash of olive oil. Season with salt and pepper and mix to coat the chips with oil.
Place on a pre-heated baking tray. Bake until cooked. Approx. 45 minutes depending on the size.
Place the Rosie & Jim Sweet Chilli Chicken Kiev’s on a preheated baking tray and bake for 25-30 minutes (35-40 minutes if frozen). Set a timer, just in case!
While they are cooking grate the carrots into a bowl.
Add the finely chopped ginger, a splash of olive oil, toasted sesame oil, salt, pepper and Mirin (if you like!).
If you have some herbs you can add them in now too. Parsley, coriander or basil are all perfect.
Mix in the toasted sesame seeds and sprinkle some on top.
Taste and add more sesame oil, Mirin, salt or pepper if required.
To make the Chilli Mayo, put 4 tablespoons of Mayo in a bowl. Add a tablespoon of Sriracha chilli sauce and mix. Taste it and add more Sriracha if you like more heat!
Once the homemade chips are cooked, sprinkle them with salt.
When the Kiev is cooked place it on the plate with chips and add a generous helping of carrot/sesame seed slaw.
Serve with Chilli Mayo on the side. Yum!
