The perfect cozy night in for me involves using seasonal decor, chilled out music and candles to create a relaxing dining experience. Cooking & entertaining doesn't have to be complicated and adding these small touches really elevate your dining experience. To make my favourite chicken parmigiana recipe, Rosie and Jim's breaded chicken fillets are the perfect base. My dad makes this dish all the time, but it can be time consuming & messy to make, so Rosie & Jim take the hassle out of cooking the chicken. The chicken is crispy and delicious, (just as good as homemade) and also gluten & egg free which is such a bonus. This means everyone can enjoy them and you can be reassured that your meal will cater to all taste buds and dietary requirements. You can really taste the quality and care in every bite thanks to it being 100% chicken breast.
Ingredients
Rosie & Jim Chicken Fillets
400g diced rooster potatoes
2 tbsp olive oil
sprig of fresh rosemary diced
salt & pepper
2 shallots diced
2 minced cloves garlic
1 tin chopped tomatoes
sprig of fresh basil (plus extra for garnish)
1 tbsp balsamic vinegar
1 ball fresh mozzarella sliced
Parmesan cheese
To serve:
rocket dressed in olive oil
steamed broccoli
Method
1) Preheat oven to 180 and cube your potatoes before drizzling in 1 tbsp olive oil, chopped fresh rosemary, salt & pepper.
2) Mix well to coat and bake in the oven for about 35minutes with your chicken fillets.
3) To make your sauce, sauté your shallots and garlic in the remaining tbsp of olive oil.
4) When soft, add your tin of tomatoes, basil, season and add balsamic vinegar. Simmer down to reduce while the chicken & potatoes are cooking.
5) 5 minutes before serving, top your chicken with sliced mozzarella & Parmesan cheese before placing back into the oven to melt.
6) Serve up your potatoes & chicken on a bed of dressed rocket and some broccoli!
After a long day of work, this dinner comes together in about 40 minutes, perfect for a midweek meal that tastes like you have been cooking all day. The sauce freezes really well, so if you are dining alone, you can keep a stash in your freezer and just defrost your sauce while your chicken is cooking.
This sauce is also great with pasta. Simply toss your favourite pasta into the sauce and top with your delicious chicken parmigiana on top. It's a super versatile recipe. Rosie & Jim's chicken schnitzel would also be a great pairing for this dish.
