Ingredients: Serves 2

2 Rosie & Jim Chicken Maryland (Ask Your Butcher!)
250g of Potatoes E.g. Rooster
Olive Oil to drizzle
Salt / Pepper

For the Slaw -

1/4 White Cabbage
1/4 Medium Red Cabbage
2 Medium Carrots
3 Tbsp Chopped Pickle
1/2 Tsp Salt
1 Tbsp White Wine Vinegar
5/6 Tbsp Mayonnaise
1 Tsp jarred Horseradish
More salt/ Pepper to taste

Cooking Instructions:

Heat oven to highest temperature or about 250C/fan 230C/gas 9.
Cut Potatoes into half an inch slices.
Blanch in a pot of boiling water for 3/4 minutes.

Put the chips on a roasting pan, drizzle with oil and season.
Bake at this high temperature for 5 minutes.

Then turn the oven down to 190C/fan 170C/gas 5.

Place the Rosie & Jim, Ballybrittas Chicken Maryland in the oven and bake both the chips and the Maryland for 25-30 minutes ( If cooking from frozen add 10 minutes to Maryland cooking time).

While they are baking, make the slaw.

Shred cabbage and grate carrot, or use the grater in your food processor to do the job much faster!
Chop up the Pickle and add to Cabbage and Pickle.
Add the salt and vinegar to the vegetables and mix.
Mix up the Mayonnaise and horseradish. Be careful - horseradish can be strong. So add to taste.

Then add the Mayo mixture to the vegetables and mix well.

Season to taste and serve with Chciken Maryland and your home made chips!
