I see that chicken continues to be the most popular meat in Ireland, accounting for a third of what we consume, and that sales have remained steady in spite of the recession. At Bord Bia's sixth biennial Poultry and Egg Conference in Monaghan recently, delegates were told that while consumption of poultry in Ireland is among the highest in Europe, our consumption of eggs has increased by 11% on last year!
