Southern Fried Chicken Goujons with Spicy Southern Hot Sweetcorn & Salsa


2 Rosie & Jim Southern Fried Chicken Goujons
450g of sweetcorn (defrosted if using frozen)
1 red pepper - chopped
1 chilli pepper - finely chopped
Jar of pickled jalapeños peppers (if you can't find any in the supermarket try the health food store)
2.5 tablespoons of butter
115g of Philadelphia or alternative cream cheese
1/4 teaspoon of paprika - not smoked
Pinch of cayenne pepper
1.5 cups of mature cheddar cheese grated
Salt & Pepper to Taste

For the Salsa

4-6 Tomatoes, peeled and chopped
1/2 Red Onion - finely chopped
1 Garlic Clove - finelu chopped
Chilli Pepper - finely chopped
1/2 Lime - juiced
Splash of white wine vinegar

To Serve

Coriander - chopped
Hot Sauce - We love the full-bodied, smoky flavoured Bull's Eye Red Hot Chilli Hot Sauce - available in SuperValu!


Preheat the oven to 190/180 oC.

Cook the Rosie & Jim goujons according to the instructions below.

Rosie & Jim Southern Fried Chicken Goujons Cooking Instructions: Oven bake for best results. Preheat oven to 190ºC/375ºF/gas 5 (fan assisted ovens reduce temperature to 170ºC). Bake product for 15-20 minutes. Cooking from frozen, allow an additional 10 minutes on to cooking time.

Spicy Southern Hot Sweetcorn - Method

Chop the pepper and the fresh chilli and set aside.
Mix butter and cream cheese in a medium saucepan over a low heat.
Stir until smooth and creamy.
Add sweetcorn, bell pepper, chilli and pickled jalapeños and stir.
Add paprika, cayenne, salt, and pepper and stir.
Add in 1 cup of cheddar cheese, continuing to stir until melted.
Scoop mixture into a casserole dish and top with remainder of the cheddar cheese.
Bake at 180 degrees for 15-20 minutes. (until hot and bubbly)

Salsa – Method

To remove the skins of the tomatoes: Cut a cross on the bottom of each one and put them in hot water for 30 seconds - 1 minute. Then take them out and plunge them in a bowl of cold water. The skins should peel off easily.
Then chop them small and put them in a bowl.
Add the lime juice, chilli, garlic, chopped onion, a splash of white wine vinegar and chopped coriander.
Mix & Season to taste.

Take the Spicy Southern Hot Sweetcorn out of the oven, garnish with hot sauce and coriander and serve with Rosie & Jim Southern Fried Chicken Goujons!

Gluten Free Southern Fried Chicken Goujons

Tender portions of breaded fillet of chicken tenderloins with a delicious, southern fried flavour. Coating is light, crispy and not too spicy!

Homemade Tomato Ketchup


  • 400g tin of good quality chopped tomatoes - we've used Antonella Polpa A Cubetti - available in SuperValu
  • 3 tbsp red wine vinegar or apple cider vinegar
  • 1 garlic clove mashed
  • 1/4 tsp Dijon Mustard
  • 1/4 tsp Onion Salt - available in SuperValu
  • 1 pinch Ground Allspice
  • Pepper to taste - no need for salt if you used onion salt.
  • Honey - to taste
  • Rosie & Jim Chicken Goujons to Serve


Put all the ingredients except for the honey in a sauce pan.

Cook on low for 30 minutes.

Stir frequently until sauce thickens.

Blend with a stick blender until smooth.

Once the ketchup has cooled down add a little honey. Start with a teaspoon and add more according to your taste. Stir to mix.

This ketchup can be stored for a few weeks in an airtight container and refrigerated.

Serve with Rosie & Jim Chicken Goujons

Heat the oven to 190oC or 170oC for fan assisted ovens.

Place the Rosie & Jim Chicken Goujons on a baking tray and bake for 15-20 minutes or 25-30 minutes if they are frozen.
