Southern Fried Chicken Fillet, Slaw, Green Beans & Homemade Country Gravy

Ingredients

For the Southern Slaw

* Lots of American recipes use sugar in their slaw – we don’t think it’s necessary but if you like it sweet feel free to add according to your taste.

Method

Preheat the oven to 190/170 oC.
Wash the potatoes and place on a baking tray.
Drizzle with Olive Oil and Salt and cook for about 1 hour.

Cook the Rosie & Jim fillets according to the instructions below. If they are frozen they will take 35 – 45 minutes so add to the oven about 20 minutes after the potatoes.

Rosie & Jim Southern Fried Fillets Cooking Instructions: Oven bake for best results. Preheat oven to 190ºC/375ºF/gas 5 (fan assisted ovens reduce temperature to 170ºC). Bake product for 25-30 minutes. Cooking from frozen, allow an additional 10 minutes on to cooking time.

Southerm Slaw - Method
In a large bowl, mix together cabbage and carrots.
In a glass bowl mix together the mayonnaise, cider vinegar and mustard. Add a pinch of salt and pepper.  Taste and add more seasoning if you like. Pour dressing over cabbage mixture and fold altogether until the cabbage and carrots are completely coated.

Put the Green Beans on to steam for 10 minutes.
In the meantime - make the Gravy...

Gravy – Method
Make a Roux. Melt the butter in a ban. Once hot add in the flour mixture and continue to whisk quickly. Keeping mixing and slowly whisk in a little milk and bring to a boil. Whisk constantly and reduce heat to a simmer. Once the gravy starts to thicken, slowly add more milk to desired consistency, whisking constantly. Add salt and pepper to taste.

  • ¼ head cabbage grated
  • 2 medium carrots, grated
  • 2/3 Tbsp of your favourite Mayo
  • Tsp of Dijon Mustard
  • Tbsp Apple Cider Vinegar
  • Salt & black pepper to taste

For the Gravy

  • 2 tablespoons butter
  • 2 tablespoons plain flour
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • We added a pinch of Cayanne pepper and ¼ teaspoon of Paprika to add more spice, but leave it out if you think it will put the kids off!
