Chicken Parmigiana


Rosie & Jim Chicken Fillets
Tomato Sauce – you could buy any jarred tomato sauce or make your own like we did with anchovies, chilli flakes, garlic & tinned tomato
Mozzarella Cheese – sliced thinly
Parmesan Cheese - grated


Heat the oven and cook the Rosie & Jim Fillets as per instructions on the back of the packet.
If you are making your own Tomato Sauce fry the anchovies, chilli flakes and garlic for a few minutes before adding a tin of tomatoes. Let this cook for 25 minutes, stirring frequently.
If you are using a jar of tomato sauce, heat that gently on the hob as per instructions.

When the Chicken Fillets are cooked put them in a grill proof dish.
Spoon some tomato sauce on top of each fillet.
Layer on a few slices of the Mozzarella Cheese.
Top with a sprinkling of Parmesan Cheese.

Put under the grill for 5 minutes to melt and lightly brown the cheese.

Garnish with Basil.

It’s so versatile you can serve it with pasta of your choice, chips, potatoes and/or salad.
