- 2 Rosie & Jim Chicken Fillets OR Southern Fried Chicken Fillets
- 2/3 cloves of Garlic
- Bunch of fresh basil
- Olive Oil
- 1 Tin of tomatoes
- Parmesan Cheese
- Spaghetti – your favourite dried or fresh spaghetti for 2 people.
Heat the oven as per instructions for the Chicken Fillets and get the pot of water on to boil for the spaghetti.
Peel and finely chop the garlic.
Heat oil in a pan and cook the garlic for a few minutes.
Add the tinned tomato. If using whole tomatoes (recommended) mash the tomatoes with a fork or potato masher.
Add 200 ml of water and Season.
Bring to a simmer and allow to simmer for 30 minutes until it has reduced and thickened. Add more water if it’s getting to thick too soon.
Stir it frequently!
Cook Rosie & Jim Fillets as per packet instructions.
Cook your chosen spaghetti to be ready at the same time as the fillets.
Once the spaghetti is cooked, use a tongs to lift it from the pan of water to the pan with the tomato.
Allowing some water to come with it, will loosen up the sauce a little.
Chop the basil finely and add to the top.
Sprinkle with Parmesan and serve with sliced Rosie & Jim Chicken Fillet on the side.
